Teriyaki Burger

Hamburgers are a very popular fast food in Japan just like in the US.  However, Japanese people like adding their own flavor to this western favorite.  Sweet Teriyaki sauce goes well with grilled (or pan fried ) beef and tangy Japanese mayo. The Teriyaki Burger is a popular Japanese spin on the American classic.

Hamburgers in Japan are usually fast food.  They taste good, but it is too bad not being able to see real hamburgers more often.  Most or all of fast food hamburger restaurants there have Teriyaki Burgers on the menu along with more typical American burgers, like cheeseburgers.  The gooey sauce for the Teriyaki Burger with a thickening agent such as cornstarch is a more American-style Teriyaki sauce than Japanese.  Authentic Japanese Teriyaki sauce for other dishes is usually a simple mixture of seasonings (Soy Sauce, sugar, Mirin…) and not so thick.  This American-style sauce, however, is great for hamburgers since it can be held inside the sandwich better.  There are some hamburger places in the US that serve Teriyaki burgers too, although a lot of the time the sauce is not so great (too sweet, too thick, etc.).  That is unfortunate because American hamburgers themselves from real restaurants are very delicious.  Unless you are lucky living in Hawaii, it may be difficult to find perfect Teriyaki Burgers locally. Here is the solution!  Make Teriyaki Burgers at home.  Don’t worry, it’s not hard make it at all.  In fact, it’s rather quick and easy to whip up this tasty dish, especially for those who already make hamburgers at home.

Teriyaki Burger Recipe

Ingredients

  • 1/3 cup Soy Sauce
  • 1/4 cup sugar
  • 1/4 cup Mirin
  • 1/2 cup water
  • 2 Tbsp cornstarch
  • 1 lb ground beef
  • 1/2 tsp salt
  • pepper
  • oil
  • 4 hamburger buns
  • 1/2 cup lettuce shredded
  • 1 tomato sliced
  • 1/2 onion thinly sliced
  • Japanese mayonnaise optional

Instructions

  • Mix soy sauce, sugar, Mirin, water and cornstarch well in a pot. Cook at medium heat until boiling, and then let it boil for 1 minute. It becomes a very thick Teriyaki sauce.
  • Mix ground beef, salt and pepper. Divide into 4 parts and make into 4″ round patties.
  • Heat a skillet at medium high heat, add oil, and place the patties in the skillet when it gets hot. Cook the patties for 2-3 minutes on each side (or until cooked to your taste).
  • On the bottom half of the hamburger buns put the cooked meat. Then pour Teriyaki sauce over the meat. Add the sliced tomato and onions and the shredded lettuce. Drizzle mayo on the lettuce and top it with the top half of the buns.

    Hi Noriko,

    First of all i’m a big fan of your website. The videos are genius and I learn a lot by following your lead. I’ve always been a big fan of Japan and Japanese food.

    I’ve got a question about this dish though. Do you need to put 1/4 cup + 2 tablespoon of soy saus? I’m not entirely sure.

      sorry for the confusion. We try to show the measurements with both cups and ml, and sometimes conversion from one to another becomes a little awkward. Although 1/4 cup plus 2 Tbsp is right, please use 90ml soy sauce.

    Just want to know, is there any others ingredient I could substitute for mirin & sake…?
    Since, we couldn’t use sake/mirin in our food. ^^”

      you could omit both and add some water, although that may not be as flavorful as the original.
