Stir-Fry Shrimp and Green Peas is Japanese home-cooking Chinese dish.  It is literally shrimp and green peas are stir fried in salt based sauce. This colorful dish is perfect in spring season.

If you can find nice fresh green peas, that would be great to use; however, frozen green peas are perfectly fine in the dish.  In Japan, Endoumame green peas are in season from spring to early summer.  Endoumame is the same family as snow peas and snap peas which are popular in the US too.  A lot of times difference of those vegetables are depending on when to be harvested. Endoumame is eaten only the round and fully ripen bean part not the husks.

It is one more step in cooking to clean shrimp with starch and salt in the recipe, but this will help shrimp from smelling fishy.  And also cleaning helps texture of the shrimp nice and springy. You can adjust the amount of ginger and garlic to your likings because that will determine how spicy the dish would be. If you like less strong of aroma and spiciness, hold some back or use only one of them.

Stir-Fry Shrimp and Green Peas Recipe

Ingredients

  • 10 oz raw shrimp shelled
  • 1/4 cup Sake
  • 1/4 tsp salt
  • 1 Tbsp sesame oil
  • 1/2 tsp Katakuriko potato starch
  • 1/2-1 tsp grated ginger
  • 1/2-1 tsp grated garlic
  • 1/4 tsp sugar
  • 2 Tbsp water
  • 1/2 Tbsp oil
  • 1 cup fresh or frozen green peas

Instructions

  • Clean shrimp with some Katakuriko potato starch and a pinch of salt (both extra, not in the ingredient list), by rubbing shrimp in a bowl. Rinse a couple of times. Pat dry with a paper towel. Sprinkle a little bit of Sake and a pinch of salt (both extra, not in the ingredients list), mix, and let sit for a few minutes.
  • In a small bowl, mix Sake, salt, sesame oil, potato starch, ginger, garlic, sugar, and water.
  • Heat a frying-pan with oil at medium heat. Add shrimp and cook for a couple of minutes. Add green peas, and stir for another couple of minutes. Then add the mixed sauce and keep cooking until the sauce has thickened.
