Curry Korokke

Curry Korokke is just like Japanese Potato Korokke (croquette) but the filling is flavored with curry powder.  The process and ingredients of making Curry Korokke are very similar to regular Korokke, but a little change of the spice makes this ordinary entree taste like a completely different food.

Korokke is a mashed potato patty coated with Panko bread crumbs and deep-fried. They are sold everywhere in Japan, from butcher shops to supermarkets to convenience stores.  It is a great dinner entree but also a tasty after school snack for kids on the way home.  In a regular Korokke, the mashed potato is usually mixed with ground beef and onions, simply seasoned with salt and pepper, then fried to a nice golden brown.  Curry Korokke is also flavored with curry powder, and it has a spicy aroma and a little hot kick too.  It is not as common and popular as the normal version, but you still can find it some places.

When you can’t find it, that’s the time to make Curry Korokke at home.  As mentioned above, it is almost the same steps and ingredients as the regular one and very easy.  That said, it takes a few steps to make Korokke.  So you might not want to start making it on a busy weekday night.  What you can do instead is to make ahead and freeze it when you have extra time.  When you finish preparing to the point just before deep-frying, freeze the coated patties.  Some other day, you can just deep-fry without defrosting it.  Start at a lower oil temperature when cooking frozen Korokke, and don’t touch and poke too much until the outer layer gets a hard shell, or it may break and spill into the oil.  Then finish cooking with high heat.

You can still use Tonkatsu sauce over Curry Korokke, but there is enough seasoning and spice in it that it’s not necessary.  With or without the sauce, try freshly fried and hot Curry Korokke.  That is the best way to eat it!

  • Peel potatoes and cut into 4 pieces each. Cook in boiling water until soft. In a big bowl, mash potatoes well.
  • Heat oil in a pan, and start cooking onion. Then add ground beef and cook until browned and cooked through. Season with salt and pepper.
  • Add meat mixture to mashed potatoes and mix well. Add curry powder and 1 Tbsp Tonkatsu Sauce. Add some more salt and pepper to taste. Mix and let it cool.
  • Divide potato and meat mixture into 8 pieces and make oval patties. Refrigerate for an hour.
  • Prepare plates or shallow bowls of flour, beaten eggs, and Panko.
  • Coat each potato patty with flour, then egg, and finally Panko (bread crumbs).
  • Heat deep-frying oil to 350-375F, and fry the patties for 3-4 minutes each side.
