Nikomi Hamburger Steak

Nikomi Hamburger Steak is Hamburger patties cooked or lightly stewed in a flavorful brown sauce. It’s quite simple and even less likely you will make mistakes in this dish than regular Hamburger Steak which is already easy to make.

Japanese Hamburger Steak is one of the most popular western-style dishes in Japan.  It is loved by the young and old, women and men.  Whichever restaurants, from family restaurants to small local diners, most likely have Hamburger Steak on the menu.

Nikomi means stewed, so Nikomi Hamburger is literally stewed hamburger steak.  The sauce the meat is stewed in is a brown sauce called “Demi-glace,” used in French cuisine.  Demi-glace sauce is made from beef (with bone), fragrant vegetables like onions, celeries, carrots, and tomatoes, flour, butter, and red wine.  All the ingredients are cooked down to make a thick rich brown sauce.  In Japan, it is easy to buy canned Demi-glace anywhere, and you don’t need to spend hours or even days making it from scratch.  Since we don’t have it easily in stores here in the US, we made a super easy version using ordinary seasonings.  We recommend using some kind of mushrooms for the sauce to give a stronger Umami flavor.

Since the hamburger patties are cooked in the sauce, you don’t really have to worry about under or over cooking the meat as you could do for regular hamburger steaks.  Cooked in this rich flavorful sauce, the meat is easily done but stays absolutely moist.

Nikomi Hamburger also freezes well.  Make extra for a weekend dinner, and enjoy them for busy week nights too!

Nikomi Hamburger Steak Recipe

Ingredients

  • 1/4 brown onion chopped
  • 1/2 lb ground pork
  • 1/2 lb ground beef
  • 1 egg
  • 1/4 cup Panko bread crumbs
  • 1/2 tsp salt
  • pepper
  • 1 Tbsp oil
  • 1 Tbsp butter
  • 1/2 brown onion thinly sliced
  • 1/2 bunch Shimeji mushrooms pulled apart into smaller bunches
  • 1 Tbsp flour
  • 1 cup chicken broth
  • 3 Tbsp ketchup
  • 3 Tbsp Worcestershire sauce
  • 1 tsp Soy Sauce
  • 1/2 tsp sugar
  • chopped parsley for garnish optional

Instructions

  • Put chopped onion, ground meat, egg, bread crumbs, salt and pepper in a large bowl. Mix very well. Divide meat mixture into 4 pieces. Form flat oval shapes.
  • In a large frying pan, heat oil at medium heat, put the meat patties in the pan, and cook. When one side is browned, turn over, cover, and cook for a few minutes. Take them out onto a plate and set aside.
  • In a clean large pan, heat butter at medium heat, and cook sliced onion and mushrooms until soft. Sprinkle with flour and cook for a couple of minutes. Add broth, ketchup, Worcestershire sauce, soy sauce, and sugar. Stir and cook for a minute. Add cooked patties in the sauce, and cook for 10 minutes covered.
  • Top with chopped parsley if you like.
