Spinach and Chicken Salad with Sesame Sauce is a variation of Spinach Salad with Sesame Sauce. It’s also called Gomaae. By adding chicken, the dish becomes more nutritious and fulfilling as a side dish or even a main dish for lighter meal. Spinach and Chicken Salad with Sesame Sauce

Ingredients

  • 2 strips chicken tenders
  • 1/8 tsp salt
  • 1 Tbsp Sake
  • 1 bunch spinach

Sesame Sauce

Instructions

  • Place chicken tenders on a plate. Sprinkle with salt and pour Sake over. Wrap with plastic, and microwave for 90 seconds. Turn chicken over, wrap, and microwave another 90 seconds. Add more cooking time if it's not cooked through. Reserve its liquid. Cool so you can handle them, and shred into small pieces by hand. Pour the reserved juice over the shredded chicken.
  • Boil water in a big pot, add spinach and let it submerge in the water, and turn off heat. Strain water. Let cool. Then squeeze water out, and pat dry with a paper towel. Cut into 1" width pieces.
  • Dry roast sesame seeds in a frying pan until lightly browned. Transfer them to a mortar, and grind finely. Add sugar and soy sauce and mix.
  • Combine chicken, spinach, and the sesame sauce together.
