Kinako and Kuromitsu Kakigori

Japanese Shaved Ice with Kinako soybean powder and Kuromitsu black sugar syrup.

Ingredients

  • 1 Tbsp Kinako soy bean powder
  • 1 Tbsp sugar
  • ice for shaving

Kuromitsu Sauce

  • 1 Tbsp molasses
  • 1/4 cup sugar
  • 1/4 cup water

Instructions

Kuromitsu Sauce

  • In a small pot, put all the ingredients for the sauce. Let boil for 3 minutes or until very slightly thickened. It will thicken further when completely cooled.

Kinako Topping

  • Mix Kinako soy powder and sugar together.

Assembling Kakigori

  • Shave ice (according to the instructions of the Kakigori machine) into a bowl to make a small mound of shaved ice, pack, and pour syrup. Add more ice to make a tall mound of shaved ice, . Pour more syrup and sprinkle Kinako mixture through a mesh sieve over ice.
