Sweet and chewy mochi dessert from Hawaii

Equipment

Ingredients

  • 1 lb mochiko
  • 2 cup sugar
  • 1/2 tsp salt
  • 1 Tbsp baking powder
  • 1 can coconut milk (14 oz)
  • 1 can evaporated milk (12 oz)
  • 4 eggs
  • 4 oz butter (melted)
  • 2 tsp vanilla extract

Instructions 

  • Preheat oven to 350°. Grease a 9×13 baking dish.
  • Combine Mochiko, sugar, baking powder, and salt in a large bowl. In another bowl, mix coconut milk, evaporated milk, eggs, melted butter, and vanilla together. Pour the liquid mixture to the dry ingredients, and mix well.
  • Pour the batter into the baking dish, and bake about 60 minutes.
  • Cool completely, cut into squares, and serve.
