What’s Karaage Chicken Wings?

Karaage Chicken Wings are deep-fried wings seasoned with soy sauce and garlic — much like the beloved Japanese Chicken Karaage. With their crispy exterior and juicy, flavorful interior, these wings are a favorite all over Japan. You’ll find different versions everywhere, from chicken wing specialty shops and izakaya pubs to local supermarkets. The best part? They’re budget-friendly and surprisingly easy to make at home.

At Japanese Cooking 101, Karaage Chicken is one of our most popular recipes — and these Karaage Chicken Wings might be even better! Chicken wings are naturally flavorful, and when deep-fried, they turn irresistibly golden and delicious.

Ingredients and Substitutions

  • Ginger and Garlic – Freshly grated ginger and garlic bring out the signature aroma and umami flavor that make Karaage so irresistible. They infuse the chicken with deep, savory notes during marination. If you don’t have fresh ginger or garlic on hand, you can substitute with granulated or powdered versions, though the flavor will be slightly milder.
  • Potato Starch (Katakuriko) – Before frying, the marinated wings are coated with katakuriko, or potato starch, instead of regular flour. This creates the light, ultra-crispy coating that Karaage is famous for. If you can’t find potato starch, cornstarch is an excellent substitute that still yields a beautifully crisp texture.
  • Salt and Pepper – A sprinkle of salt and pepper right after frying enhances the overall flavor and adds that final touch of savoriness. Adjust the salt to your taste — or skip the extra sprinkle if you’re watching your sodium intake.
