Loco Moco

Loco Moco is a Hawaiian rice bowl dish with Hamburger Steak. Loco Moco hamburger is similar to Japanese Hamburger or Salisbury steak. The steak is served over Steamed Rice, with a thick gravy sauce and a fried egg placed on top. This Hawaiian soul food has got just the right taste and many people have fallen in love with it. The popularity of Loco Moco has spread to everywhere in the world, and now it’s a well-known Hawaiian dish in Japan too.

Loco Moco was created by a Japanese American restaurant owner in Hawaii after local high school students asked him to make something cheap and filling. Loco Moco has been enjoyed by locals and tourists in Hawaii for 80 years, and now there are national Loco Moco fast food restaurants bringing this popular dish to people in the mainland US. Loco Moco came to Japan much later, but today it is well accepted by the young to the old, at restaurants and home. Because the main part of the dish, hamburger steak, is such an iconic part of Japanese western cuisine, there were no obstacles for Loco Moco to take root there. The original gravy sauce is often adjusted in Japan to simulate Japanese hamburger steak sauce, so it may be different from Hawaiian Loco Moco sauce. Because the steak contains Panko, its texture may be fluffier. Over all, our Loco Moco is a more Japanese-influenced version.

Ingredients

  • 1/3 Cup Panko bread crumbs
  • 2 Tbsp milk
  • 5 oz ground beef
  • 5 oz ground pork
  • 1 egg
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 Tbsp oil
  • 2 eggs cooked sunny-side-up
  • 2 cups steamed rice
  • lettuce
  • tomato

Loco Moco Sauce

Instructions

  • Put Panko in a large bowl, add milk and stir. Add meat, raw egg, salt, and pepper to the Panko mixture, and mix very well. Divide the meat into 2 pieces and roll into oval balls. Push down to form flat patties. 
  • Heat oil in a frying pan at medium heat. Place the patties in the hot oil, and fry for 4-5 minutes on one side. Flip over and fry for 3-4 minutes covered, until cooked through. Do not wash the frying pan yet.
  • Make Loco Moco sauce. Put butter in the same pan used for cooking the steaks and melt at medium heat. Add flour and stir constantly, cooking for 2 minutes. Slowly add beef broth. Use a whisk if needed. Add ketchup and Worcestershire sauce. Add salt and pepper to taste.
  • Plate steamed rice, lettuce, and tomato. On top of the rice, place a steak, sauce, and a sunny-side-up egg. Assemble another one.
