Because the pork is very thin, it cooks through quickly. Rich umami flavor from the pork enriches the soup, giving it a wonderful taste. Lettuce adds a nice crunchy texture to the dish, so try not to cook it too long.   • 6 leaves leafy green lettuce
  • 7 oz very thinly sliced pork
  • 4 cups Dashi
  • 4 Tbsp miso paste

Instructions 

  • Tear lettuce leaves apart into smaller pieces. Cut sliced pork in half.
  • Make dashi with a dashi packet. Dissolve the miso paste in the dashi. Add lettuce, and swish the pork one slice at a time in the soup. When the meat is cooked through, remove from heat. Serve immediately.
