Clean shrimp with some Katakuriko potato starch and a pinch of salt (both extra, not in the ingredient list), by rubbing shrimp in a bowl. Rinse a couple of times. Pat dry with a paper towel. Sprinkle a little bit of Sake and a pinch of salt (both extra, not in the ingredients list), mix, and let sit for a few minutes.
In a small bowl, mix Sake, salt, sesame oil, potato starch, ginger, garlic, sugar, and water.
Heat a frying-pan with oil at medium heat. Add shrimp and cook for a couple of minutes. Add green peas, and stir for another couple of minutes. Then add the mixed sauce and keep cooking until the sauce has thickened.
