Nikumiso is ground meat cooked with aromatic miso based sauce. While ground pork is more commonly used for this dish, ground beef is just as good. In this recipe, in addition to regular miso paste, gochujang (Korean red chili paste) is added to make it a little bit spicy. The strong flavored meat goes really well with steamed rice, noodle, or lettuce.

Beef Niku Miso

Ingredients

  • 1 tsp ginger
  • 2 cloves garlic
  • 1/2 onion
  • 2 tbsp sugar
  • 2 tbsp sake
  • 2 tbsp soy sauce
  • 3 tbsp miso paste
  • 1 tbsp gochujang (red chili paste)
  • 1 tbsp oil
  • 1 lb ground beef

Instructions 

  • Mince ginger and garlic. Chop onion finely and set aside.
  • In a small bowl, mix sugar, sake, soy sauce, miso paste, and gochujang, and set aside.
  • In a frying pan, heat oil at medium heat with ginger and garlic. When the oil starts to be aromatic, add ground beef and cook until the color changes. Then add chopped onion, and cook until soft. Add 2 and cook for 5 minutes.

Notes

Serve Nikkumiso over rice or noodle with chopped green onion and sesame seeds if you like. Or wrap with lettuce for a tasty lettuce wrap.

    Made this last night and it was absolutely delicious! So flavorful and with just the right amount of kick from the gochujang. I made the recipe as written with only one tiny modification: I added a few chopped shiitake mushrooms at the same time as the onion.
    Thank you for this recipe that will definitely go into my regular rotation!
